Happy Thanksgiving! Here’s some healthy food inspiration for the holidays. A salad of roasted baby carrots, beets, Swiss chard, and pine nuts. Orange, purple, and green. A treat not just for the eyes, but for every inch of skin 🙂
The only rule about food I bother to remember is this – eat the rainbow!
Eat this, eat that. This has A and B and will cure X. That has C and D and will prevent Y. Too much to remember! The study of nutrition is always evolving. And lacking in conclusive evidence for all the benefits you read about in the media.
But one thing is clear – Colors mean antioxidant-rich pigments, such as carotenoids and polyphenols. At the minimum, they confer protective benefits to your organs and skin tissues (bust the free radicals!) And most likely, they will do much more.
I eat what I please because life’s too short. But subconsciously, I gravitate toward different colored foods. We eat with our eyes, don’t we? 🙂 In a day, I try to get as many colors as possible through fruits and vegetables.
As they say, variety is the spice of life! And perhaps the key to long life too.
